INGREDIENTS:⁠
💚 1 bunch asparagus⁠
💚 1 tsp olive oil⁠
💚 pinch of sea salt⁠
💚 freshly ground pepper⁠
💚 a few grates of lemon zest (optional)⁠
⁠
METHOD:⁠
💚 Preheat the oven to 425°F.⁠
💚 Break or trim the tougher bottom parts of the spears (about 1 inch) and discard.⁠
💚 On a baking sheet lined with parchment paper, toss the asparagus spears in 1 tsp of olive oil using your hands. Be sure to rub some of the oil into the tops of the asparagus, so they get nice and crispy.⁠
💚 Generously salt and pepper, and roast for 9-12 minutes, depending on how thick the spears are.⁠
💚 Top with a little lemon zest and enjoy!⁠

🍄 Have you seen gorgeous oyster mushrooms at markets but been unsure how to prepare them? Here’s how to use them! 😋😋😋

The trick is to pull them apart instead of chopping them with a knife. From there you can stir fry them roast them or deep fry them. Yum!!!

☀️ These morning glory muffins are DELICIOUS and packed with nutrition! They’re loaded with carrots, apples, bananas, oats, and nuts, try are naturally sweetened, and are perfectly spiced with orange zest, nutmeg, ginger, and vanilla. 👌⁠

RECIPE: 

⁠Wet Ingredients:
* 3 carrots, grated, about 4-5 oz
* 1 apple, grated, about 4-5 oz
* 2 mashed bananas, 10 oz
* 2 eggs
* 1/4 cup nut butter, peanut or almond, 2 oz
* 1 tsp vanilla
* 1 tbsp orange zest

Dry Ingredients:
* 1.25 cups instant oats, or oat flour, 5 oz
* 1/4 cup chopped walnuts, 2 oz
* 1 tsp baking powder
* 1/4 tsp ground nutmeg
* 1/2 tsp ground ginger
* 1 tsp cinnamon

Instructions:
1️⃣ Preheat the oven to 375° F. Line muffin tins with muffin liners or grease well.
2️⃣ Mash the banana, eggs, and nut butter together until smooth.
3️⃣ Grate the carrot and apple and stir it into the mixture along with the oats, nuts, and spices.
4️⃣ Bake for 30 -35 minutes, or until a toothpick comes out clean.
5️⃣ Allow the muffins to cool for 30 minutes before eating. Otherwise they will be gooey inside.
6️⃣ Store in an airtight container or freeze. Reheat in a toaster oven or microwave.

Make a big batch and you’ve got a wholesome and tasty breakfast you can enjoy all week!⁠

Breakfast or dessert? 😍 These sweet potato brownies are wholesome, nutritious, and delicious enough for either! 🍫😋

Recipe:
* 1/4 cup almond butter (2 oz)
* 1 cup cooked mashed sweet potato (8 oz)
* 2 tbsp honey (or other liquid sweetener of choice)
* 2 eggs
* 2 tbsp instant oats (or almond meal, oat flour, or your flour of choice)
* 1 tsp pure vanilla extract
* 1/3 cup unsweetened cocoa powder
* 1/2 tsp baking powder 
* 1/4 cup dark chocolate chips
* 1/4 cup nuts (walnuts, hazelnuts, pecans, etc.)
* 1/8 tsp sea salt

1. Cook your sweet potato until soft using your preferred method. Allow to cool and remove the peels. You can bake them, steam them, or pressure cook them for this recipe.

2. Preheat the oven to 350° F

3. Mash the sweet potato, sweetener, almond butter, and eggs in a bowl and mix until well combined.

4. Stir in the remaining ingredients and combine well.

5. Spread the mixture evenly in a greased or parchment lined brownie dish. Top with a sprinkle of cacao nibs, nuts, or chocolate chips.

6. Depending on how shallow the dish is, the cooking time will vary. Start with 30 minutes, and add more time if needed. They should be chocolatey and gooey, but cooked through.

7. Let the brownies cool before breaking into them. (I know it's hard!)

This EASY and simple melty eggplanty saucy goodness is delicious over pasta or polenta, or just eaten straight with a fork. 😋

Ingredients:
(Serves 4-6)
- 2 medium eggplants
- 3-4 Tbsp olive oil
- 1 jar of marinara sauce
- pinch of sea salt
- 4-5 garlic cloves, roughly chopped

Instructions:
- Toss everything together in a casserole dish. Line the edges in foil if you don’t want to have a charred dish to clean later.
- Bake for 45 minutes to 1 hour, stirring every 20-25 minutes.

Enjoy!
