💚 1 bunch asparagus⁠
💚 1 tsp olive oil⁠
💚 pinch of sea salt⁠
💚 freshly ground pepper⁠
💚 a few grates of lemon zest (optional)⁠

💚 Preheat the oven to 425°F.⁠
💚 Break or trim the tougher bottom parts of the spears (about 1 inch) and discard.⁠
💚 On a baking sheet lined with parchment paper, toss the asparagus spears in 1 tsp of olive oil using your hands. Be sure to rub some of the oil into the tops of the asparagus, so they get nice and crispy.⁠

Honesty time: Lately my weekday breakfast routine has been hitting up the drive through for a breakfast burrito and coffee, because I've been in survival mode at work and just need EASY. ⁠
⁠
But then this week I remembered about overnight oatmeal, and I have fallen back in LOVE with this old favorite of mine. Ughhhhh it's sooooo good. I've managed to get into the kitchen every morning this week to make myself a big delicious breakfast bowl because there's no cooking involved, and the toppings are so incredibly yummy. If exhausted weekday Katie has been choosing this over a drive through burrito, you know it really is EASY.⁠

These delicious oats are spiced with the same spices you’ll find in golden milk: turmeric, ginger, cinnamon, and vanilla. I use the Golden Mellow superfood mix from @yoursuperfoods. I loooove their mixes. 😍⁠

Not only are these oats super yummy, they also give the body a nice boost in the wintertime.⁠
⁠
I love to top my cozy golden oats with a swirl of almond butter, 5-minute caramelized bananas, and a sprinkle of cacao nibs and coconut flakes. ⁠

💚 How to get perfect crispy roasted brussels sprouts:⁠
⁠
👉 Ingredients:⁠
• 1 lb brussels sprouts, trimmed⁠
• 1 Tbsp (1/2 oz) olive oil⁠
• sea salt⁠
• fresh ground pepper⁠
⁠
👉 Instructions:⁠
• Preheat the oven to 400°F and line a baking sheet with parchment paper.⁠
• Break or cut the broccoli into florets of a similar size. For brussels sprouts, you can roast them whole or halved, both are yummy but whole sprouts will take a bit longer to cook.⁠
• Arrange the veggies on the baking sheet in a single layer, giving them some space. Overcrowding won’t allow moisture to escape and will result in soggy veggies.⁠
• Drizzle the oil over the veggies and use your hands to toss and coat them with the oil. Make sure that they are coated by rubbing them around the pan or gently rubbing the oil into them.⁠
• Generously season with salt and pepper.⁠
• Roast for 15 - 20 minutes, depending upon the size. Smaller pieces will take less time. Keep a close eye on it, and remove from the oven when they begin turning brown and they look crispy but not burned.⁠
