This yummy salad has the flavors of a fast food burger but it’s healthy and entirely plant based.
Ingredients*
Salad
- Lettuce
- Tomato
- Cucumbers
- Cooked quinoa or rice optional
Lentils
- 1.5 cups cooked green or brown lentils 9 oz
- 1/2 tsp garlic powder
- 2 tsp onion powder
- 1 Tbsp Worcestershire sauce or A1 sauce
- 2 tsp mustard
- 2 Tbsp ketchup or other tomato condiment
Secret Sauce
- 2 Tbsp (vegan) mayo
- 1/4 cup (vegan) yogurt with a neutral flavor
- 1 Tbsp ketchup or tomato paste
- 1 Tbsp minced pickles or pickle relish
- 1 tsp white vinegar
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Instructions
- Chop the salad veggies.
- Stir the seasonings into the cooked lentils, and simmer for a few minutes to warm through and meld the flavors.
- Mix the sauce ingredients together with a fork in a cup.
- Assemble your yummy salad! Season with salt and pepper to taste.
Notes
- To make this meal gluten-free, be sure to use certified gluten-free quinoa. Quinoa is a naturally gluten-free grain, but it is often processed with products containing gluten and this contamination can be enough to trigger an immune response in those with high gluten sensitivity or celiac disease.
