This is an excellent weeknight meal for when you want something easy, tasty, and simple. This cashew cabbage stir fry is super satisfying, and comes together in about 10 minutes!
Ingredients*
Veggies
- Handful of your favorite stir-fry veggies, such as mushrooms, bell pepper, celery, green beans, carrots, or onions
- Handful of shredded or thinly sliced cabbage any kind!
Protein
- 1/2 cup dry roasted cashews 2 oz
Fat Serving
- 1 Tbsp dark toasted sesame oil 0.5 oz
Seasonings
- 3 garlic cloves minced
- 2 Tbsp soy sauce or sub tamari or liquid aminos for gf
- Sprinkle of sesame seeds to garnish
Instructions
- In a skillet, stir fry the veggies and garlic (except for the cabbage) for a few minutes in about half of the sesame oil portion, until softened.
- Add the soy sauce, the rest of the sesame oil, cabbage, and cashews. Stir, cover, and steam until the cabbage is brightly colored and softened, about 5 minutes.
- That's it!

This just might be tomorrow’s dinner! (it would be tonight’s but, you know, BLE!) And what is funny about this is that this morning I was praising the texture of cashews in my breakfast cookies. The cashews feel so rich and I always tried to eat as few as possible so pouring out 2 oz feels kinda crazy.
For some people, nuts can be a trigger or a binge food, so be careful. I love cashews, and let myself have a meal with only nuts as my protein once every week or so, because it is a heavier food choice. Enjoy your lovely bright line meal! 🙂
If you use the pineapple do you just throw it in with the veggies to stir-fry?
I’d add pineapple at the end, just to warm it up. It doesn’t need any cooking. Great idea!
