Lately I’ve been into fancy toast toppings, and I’ve started referring to this breakfast at home as “sexy toast.” Here are my 6 favorite variations of sexy toast. I loooove a good crusty sourdough bread, but if you don’t eat bread, try making sexy toast with flourless bread (like Ezekiel), or try large roasted potato slices, or large sweet potato slices.
Ingredients*
#1: Ricotta, Tomato & Basil Toast
- 2 slices of sourdough toast or flourless alternative
- 2 oz plant-based ricotta or dairy ricotta
- 6 oz sliced heirloom tomatoes or cherry tomatoes in season!
- Fresh basil leaves, chopped to garnish
- A grind of fresh ground pepper and sea salt to taste
#2: Ricotta & Garlicky Sautéed Mushroom Toast
- 2 slices of sourdough toast or flourless alternative
- 2 oz plant-based ricotta or dairy ricotta
- 6 oz crimini mushrooms or button mushrooms sliced
- 1 garlic clove pressed or minced
- light splash of olive oil
- A grind of fresh ground pepper and sea salt to taste
#3: Peanut Butter, Berry Compote & Berry Toast
- 2 slices of sourdough toast or flourless alternative
- 2 oz peanut butter
- 2 oz simple fruit compote
- 4 oz berries or fresh fruit
- sprinkle of hemp seeds optional
#4: Cucumber, Hummus, Sprouts & Seed Toast
- 2 slices of sourdough toast or flourless alternative
- 3 oz hummus
- 1 Tbsp sunflower seeds 1/2 oz
- Cucumber slices
- seed or legume sprouts
- Sprinkle of cumin, paprika, or savory seasoning of choice
#5: Mashed Avocado & Scrambled Egg Toast
- 2 slices of sourdough toast or flourless alternative
- 2 eggs scrambled
- 1/2 avocado mashed
- A sprinkle of chili flakes to garnish, or try chili jam under the avocado!
- A grind of fresh ground pepper and sea salt to taste
#6: Ricotta, Basil, & Balsamic Strawberry Toast
- 2 slices of sourdough toast or flourless alternative
- 2 oz plant-based ricotta or dairy ricotta
- 6 oz strawberries, sliced cooked for 2-3 minutes in a pot with 1 tsp of good quality balsamic vinegar
- Fresh basil leaves, chopped to garnish
- sprinkle of hemp seeds optional, to garnish
Instructions
- Pretty straightforward… put the yummy things on the toast! 🙂
