Strawberry season is here!! If you’ve never eaten a perfectly ripe strawberry straight off the vine, you’re majorly missing out on life.
This time of year gardens and farmers markets are bursting with the sweetest, most flavorful strawberries you’ll find all year! Do yourself a favor and buy yourself a big flat of them. Then, come back to this roundup of my very favorite spring strawberry recipes and make the most of these delicious, precious few weeks.
1. Vanilla Chia Strawberry Pudding
Have you ever tried coconut yogurt? It is an absolutely gorgeous pairing with strawberries. It’s naturally sweet, luxuriously creamy, and tastes like dessert for breakfast. This versatile chia pudding can be layered with any kind of fruit, but this time of year I’m allllll about the strawberries. Mix it up before bed and wake up to a delicious breakfast treat!

2. Strawberry Spinach Salad
Not many flavors work as perfectly together as strawberries and balsamic vinegar. What a match!! This is my FAVORITE thing to do with sweet spring strawberries hands down. The combination of sweet, savory, tangy, creamy, and crunchy is simply to die for.

3. Strawberry Shortcake Oat Cups
These adorable little flourless oatmeal muffins are light, flavorful, and a perfect base for creamy yogurt and strawberries. The muffins can be made ahead and frozen, or topped with all kinds of things besides strawberries, but why mess with a classic combo?

4. Strawberry Rhubarb Oatmeal Bars
These strawberry rhubarb oatmeal bars are healthy, delicious, easy to make, free of refined sugar and flour, naturally vegan, and easily made gluten free. Paired with some vanilla yogurt, these are like dessert for breakfast but without the blood sugar crash afterwards! They also reheat beautifully for yummy breakfasts all week long.

5. Rainbow Crunch Strawberry Kale Salad
If you’re not a salad enthusiast or kale enthusiast, just hear me out for a second. The KEY to an out-of-this-world salad is variation! Variation in flavor, color, and texture. This salad has it all, crunchy, creamy, soft, leafy, tangy, sweet, savory, satisfying, and so PRETTY with those pops of purple and red! And while your mouth is enjoying all the amazing flavor in this delicious strawberry kale salad, your body will also be celebrating the major nutrition boost.

6. Easy Strawberry Rhubarb Compote
Welcome spring flavors!!! This simple, easy strawberry rhubarb compote has just two ingredients, strawberries and rhubarb! It’s made by simply placing the ingredients in a pot and cooking them down for 5-10 minutes into a gorgeous sauce. It’s naturally sweet from the strawberries, and delightfully tart. I love to put this magical sauce on oatmeal, yogurt, pancakes, waffles, and ice cream for a treat!

7. Peanut Butter & Jelly Overnight Oats
This classic flavor combination works great with all kinds of fruit, but strawberries for me scream PEANUT BUTTER & JELLY! The creamy overnight oats and satisfying peanut butter make for a sweet & salty symphony in your mouth. This breakfast is easy to whip up the night before, so that you wake up to an exciting treat in the morning ready to go!

8. PB & J Baked Oatmeal
These yummy bars of vegan baked oatmeal hold together well and are easily reheated in a toaster for a 5-minute, filling breakfast. Top the warm bars with peanut butter and a scoop of chia jam, and you’ll be fueled and happy all morning. Perfect for batch-cooking ahead for a busy workweek.
