1. Banana Oat Breakfast Cookies
Is there anything better than a soft, warm baked goods in the morning alongside a hot beverage? As much as I love this idea, I’ve also found that super sweet breakfasts never get the day off to the right start. If I start my day with a blast of sugar and flour, I find myself on a mood and blood sugar roller coaster, chasing my hunger and energy levels all day. These sugar and flour free breakfast cookies changed all that.
2. Quinoa Breakfast Cookies
These quinoa breakfast cookies are a great way to use up leftover quinoa. I always have a container of cooked quinoa in the fridge ready for salads and weeknight dinners, so these cookies can come together in 5 minutes on a lazy morning. This recipe is very versatile, so go ahead and experiment with other fun add-ins!
3. Pumpkin Spiced Breakfast Cookies
I experimented mightily to bring you this tasty pumpkin breakfast treat! Pumpkin is hard to work with in sweetener-free baking, because it has no natural sweetness, and without the usual heaps of sweetener, unsweetened pumpkin honestly doesn’t taste very good. But fortunately for you, I’m a wizard.

These tasty morsels work without flour or sugar by using absorbent oats, fresh fruit, ripe bananas, and the healthy fats and oils in nut butter. They are perfect for making ahead, freeze well, and travel well. I don’t get on planes without them, and I always make a big batch when heading off on a camping or hiking trip. They are also great for grab-and-go work mornings.
