Personally, I get more excited about fresh fruit in season than any dessert loaded with sugar and flour. So refreshing, naturally sweet and delicious! Salads don’t get much better than this in the summer time on a hot day!
- Watermelon, cubed
- Strawberries, sliced
- Blueberries, optional
- Fresh squeezed lime juice, to taste
- Fresh mint, chopped, to taste
- Gently toss and serve!
- For some interesting variations on this salad, try thinly sliced red onions, cucumbers, or avocado. If you eat dairy, feta cheese is a delicious addition as well.
- Keeps well for a day or so in the fridge.
